OSS Menu Monday-Chicken Spaghetti

Well, hello sweet friends! Today, for OSS Menu Monday-Chicken Spaghetti is where it’s at. We enjoy our dinners at home and we don’t eat out very often at all (unless it’s date night). So, I run through quite a lot of recipes, which I will eventually share here with you! This chicken spaghetti is actually my Nena’s recipe. She used to make this all the time for us. It is SOOOO yummy and full of flavor! Now, let’s dig in! Oh, and some of you have asked where I bought my white Dutch Oven in the pic below, it is sold out in white so I linked another one here.

First, you need to boil the spaghetti noodles per package directions.

While that is boiling, you will cut up the onion and bell pepper. place the onion and bell pepper in a skillet with the butter and let simmer.

While the pepper and onion are sautéing, shred the chicken. Then, place the Velveeta, chicken and chicken broth in with the pepper and onion mixture.

Pour the mixture into a 9×13 dish and bake at 350 degrees for 30 minutes. It is super easy and oh so delicious!

Nena’s Chicken Spaghetti

A delicious casserole filled with gooey cheese and chicken! Perfect to take to friends as well!

Ingredients

  • 1 rotiserrie chicken
  • 1 T butter
  • 1/2 cup chopped bell pepper
  • 1/2 cup chopped onion
  • 1 lb Velveeta cheese
  • salt to taste
  • 1 pkg spaghetti
  • 1 box broth

Instructions

  1. Saute butter, onion, bell pepper.

  2. Cook spaghetti according to package directions.

  3. Shred chicken.

  4. Add chicken, and velveeta cheese to the sauted mixture.

  5. Add broth(amount varies but add enough to make it a soupy mixture).

  6. Drain pasta and add it to the soupy mixture.

  7. Pour into a 9×13 dish.

  8. Bake at 350 degrees for 30 minutes.

  9. Serve with garlic bread.
