Easy Weeknight Taco Bake

If you are anything like me, you are always searching for quick and easy weeknight recipes. I coach basketball and teach so my nights are mostly always me running around and trying to fly by the seat of my pants. So, I put together an easy weeknight taco bake for all of you. It has been a hit in our home for a long time. It kind of reminds me of the 7-layer dip that so many people take to parties and such.

What is a go-to meal for you during the week? One that you just don’t even have to think about, you just put it together and viola! Is it a taco night, spaghetti night, or something else? id love to hear your go to meals in the comments below. Its so fun to me when we all share our ideas and help each other out. Quick Weeknight Taco Casserole

This easy mouth-watering recipe will have your kids screaming for more!

Ingredients

  • 1 lb ground beef
  • 1 pkg taco seasoning
  • 1 tomato, diced
  • 1 can black olives, optional
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 can refried beans or black beans
  • 1 bag fritos, chili cheese or regular
  • 1 cup salsa
  • 1 container guacamole I use Holy Guacamole
  • 1/4 cup diced oinions
  • 1 pkg shredded lettuce
  • 1 can kernel corn, drained

Instructions

  1. Preheat oven to 350 degrees.

  2. Brown ground beef and onions together in skillet.

  3. Drain grease.

  4. Add 3/4 cup of water and 1 pkg of taco seasoning and simmer for 5 minutes.

  5. Spread refried beans or black beans on bottom of 9×13 baking dish.

  6. Spread sour cream over refried/black beans.

  7. Spread prepared ground beef mixture over the sour cream.

  8. Spread guacamole over the meat mixture.

  9. Layer the can of drained corn over the guacamole.

  10. Cover with 1 cup of the cheese.

  11. Bake for 15 minutes.

  12. Remove from the oven and add fritos, diced tomatoes and black olives to the top.

  13. Sprinkle remaining cheese on top.

  14. Return to the oven and bake an additional 5 minutes.

  15. Sprinkle lettuce on top.

My apologies for the picture quality of my easy weeknight taco bake but I never even thought about putting it on the blog since it was just a quick weeknight meal. Maybe next time I make it, I will take the time to get good quality pics. Sorry friends, just trust me when I say it is delish!!
