OSS Menu Monday-Buffalo Chicken Tacos

Hey y’all! How are you all holding up during this COVID-19 time? We have our two college kiddos home and the other two that are in Middle and High School. SO, we have a full house folks! My eyes have really been opened to all the things I actually just pass over each day. If nothing else, this has taught me to slow down and not take the little things for granted. God is good and I know He hears our prayers through this time so I will just trust in that promise. Alrighty, on to the main reason I am writing you today….OSS Menu Monday-buffalo chicken tacos!! Am I right or am I right? YUMMO!!!

Buffalo chicken tacos are pretty much the easiest things you will ever make! They are packed with flavor and only require a few ingredients, now I know I’m speaking your language.

I start with 2 rotisserie chickens. I shop at Kroger and they always have hot and fresh ones there ready for the taking. Now, I use 2 because we have 6 hungry mouths to feed, 3 of which are men. Boy, can those guys really put it away? Our grocery budget has been shot out of the water the past two weeks. EEEKKKK!! SO, if you have a smaller family, just adjust the recipe accordingly. I tear all the meat off of the chickens and then place the chicken in a skillet.

I shred the chicken up really good once I have it in the pot. Amazon has this really great meat shredder that I will share with y’all here. It makes this process super easy. Once I have shredded up the chicken really well, I add the buffalo sauce. For two chickens I use the entire bottle.

I simmer the chicken and sauce for a few minutes on medium heat. While that is simmering, I cut up avocado. I also like to have shredded lettuce and cheese to add to the tacos. I use fresh flour tortillas and then top the tacos with ranch dressing. YUM! I told you that this was a super easy recipe. I hope you enjoyed this weeks OSS Menu Monday-Buffalo Chicken Tacos! Buffalo Chicken Tacos

Super easy and oh so yummy buffalo chicken tacos. Full of flavor and kick!

Ingredients

  • 2 cooked rotisserie chickens
  • 1 bottle Hank's buffalo sauce
  • 1 pkg 10 tortillas
  • 1 avocado, cubed
  • 1 1/2 cups shredded lettuce
  • 1 cup shredded cheese
  • 1 bottle ranch dressing

Instructions

  1. Pull chicken off of the bone.

  2. Put chicken in a large skillet and shred.

  3. Pour bottle of buffalo sauce over the chicken.

  4. Simmer chicken and sauce for about 5 minutes.

  5. Dice up the avocado.

  6. Place chicken mixture in the flour tortillas.

  7. Top with avocado, shredded cheese, lettuce and ranch dressing.

  8. ENJOY!!
